Alaska King or Chinook Salmon

  • Largest and least abundant of the species.

 Alaska Sockeye or Red Salmon
  • Known for deep red flesh, color retention, firm texture, and distinctive flavor.
  • Average weight: 6 lbs.
 Alaska Coho or Silver Salmon
  • Second largest of the species.
  • Average weight: 12 lbs.
  • One of the most commonly used species in foodservice.
  • Known for orange-red flesh, superior texture, and excellent eye appeal.
Alaska Chum Salmon
  • Strong foodservice demand; used in almost every segment.
  • Average weight: 8 lbs.
  • Known for their firm pink flesh, moderate fat content and delicate flavor.
Alaska Pink Salmon
  • Smallest and most abundant of the species.
  • Average weight: 2-3 lbs.

Alaska Pink Shrimp

  • Average: 350/500 count (whole-cooked).

Alaska Spot Prawns
  • Largest of the cold-water species up to 9".
  • Average: 21/30 count.
  • Firm texture and sweet flavor.
  • Not available in large quantities.
Alaska Scallops
  • Sweet, tender, buttery meat.
  • Average valve height: 4".
  • Creamy colored meat (abductor) becomes white when cooked.
