Lean and nutritious Alaska Cod is ideal for a wide range of foodservice menus, from fast food to fine dining restaurants.



Identification
Heavy bodied with three dorsal fins, two anal fins and a broad, nearly square tail. Color is gray to brown above, pale below, with brown spots on upper parts. Long barbel on lower jaw longer than diameter of eye (rarely shorter).

Size
Average 5-10 lbs., maximum about 40 lbs.

Packaging
Fresh: fillets 5, 10 and 15 lb. poly bags; 10, 12 or 20 lb. plastic boxes.
Frozen: dressed/headed 50 and 80 lb. boxes, fillets 15 lb. shatter packs and 15-25 lb. IQF packs, mince and fillets 16.5 lb. blocks.

Product Forms
Frozen: dressed, head-on or head-off; IQF fillets, skinless/boneless shatter or layer packs, 3-15 lb. cases in 45 lb. master; steaks; skinless-boneless fillet and mince blocks.
Fillets are graded: Shatter pack 3/15 lb.; IQF 1/25 lb., Blocks 4/16.5 lb. and Surimi 1/10 kg.

H&G: 47%-53% from whole
Fillets: 18%-20% from whole
Mince (for fish sticks): 7%
